This recipe is based on a traditional Hungarian recipe which also adds potatoes. Since I am on a low carb diet I can not add potatoes this time, but I can still make the chicken legs without them. You will need the following ingredients:
- 4 Large free range chicken legs
- 2 Large onions
- 150g / 5oz smoked lard, or smoked all fat bacon.
- 1-2 Larger green hot chili pepper
- Olive oil
- Seasoning:
- 1 tbs ground cumin
- 1 tbs freshly ground or coarse pepper
- 1 tbs coarse salt
- 1 tbs garlic powder
Turn on your oven and set temperature to 180c/350F. Peel and slice the onions into thin onion rings, slice the chilli peppers into rings and cut the smoked all fat bacon into small cubes. Once you are done place the bacon cubes into a glass oven dish followed by the onions and chilies.
Now prepare the seasoning. Mix and shake the cumin, salt, pepper and garlic powder in a bowl.
Now coat the chicken legs with thin olive oil then rub them with the seasoning. Make sure you spread the seasoning evenly on each 4 chicken legs. Once done place them on top of the onions and chilies.
Cover the glass oven dish with aluminum foil and put it into the oven for 2.5 hours. Check regularly, if the chicken legs turn soft and tender you can remove the dish from the oven. The desired state is “fall of the bone” chicken and caramelized onions and chilies on the bottom of the glass oven dish as you can see it on the following photos.
